Gluten Free Penne + Balsamic Cremini Mushrooms

Friday dinner looked like this 👆🏻😛 and it was the most delish.


Today was awesome! Started off with getting up bright and early for Creative Mornings at the Design Exchange (if you haven’t heard of this event, check it out! It’s currently in 180 cities worldwide 🌎) This eve I had a killer cardio workout at Elle Fitness and sooo needed this afterwards! FYI I was cooking while listening to the curated “Friday Feeling” playlist on Apple Music - so good if you’re so inclined to have an impromptu dance party with your pals.. or ya know, alone #nojudgments 😆😆

Recipe:
Gluten free penne with sautéed spinach, crumbled goat cheese and a little salt and pepper. About 1/4 of an avo (looks like half but it’s sliced on the back) with some chili powder and pepper to taste.

Last but not least, hearty & flavourful balsamic cremini mushrooms. Just spray some olive oil in a pan, about 2 cloves of minced garlic, a pinch sea salt and a splash of chicken broth and sauté for about a min or two. Then pour about 3 tablespoons of balsamic vinaigrette + chopped chives, sauté 6-7 mins on low-med heat. Serve with some more chives, pepper and hemp seeds. Yo, enjoy.
