Turmeric Zucchini Squash and Kale Salad
This may sound like a fancy salad, but you guys - it's seriously easy to make! It's done in like 30 minutes. Besides, you deserve a lil fancy in your life :) I think salads have a bad rap - often times they're known for being boring, bland, "rabbit food" or just thought to leave you hungry. But with a little creativity and maybe a Pinterest search or two, you can create thee new and improved Salad 2.0
I've combined some yellow zucchini squash seasoned with turmeric ghee, toasted sliced almonds, pomegranate, goat cheese all on a bed of kale with my sweet and tangy homemade dressing. It's such a great combo that's great as is OR paired with your fave protein (I love to add salmon!). This recipe makes four side servings or you can divide it into two larger servings.
