Eggplant Pizza Bites
Remember those Bagel Bites or Pizza Pockets when you were younger? #90sChild. When I used to babysit my brother and cousins, those were my GO-TO quick and easy things to pop in the microwave and serve. LOL… thankfully times have changed.
These new and improved Pizza Bites seriously taste so good! Yes, the base is eggplant but I promise they’re better than any bagel bite I’ve ever had. Plus, I served these up during a big birthday bash at my parent’s house this summer and they were a huge hit!! (to my surprise, tbh). My not-so-holistic family and friends LOVED them! TIP: I really think the oregano makes the diff here - so don’t skip out on that!
This recipe requires you to kind of eyeball the amounts needed for each ingredient. For example, “handful of cherry tomatoes” - it really depends on how many eggplant slices you have, but you’ll want 1-2 cherry tomato slices on each eggplant base (as seen in the picture). There’s also a typo/glitch in the recipe below, it should say “about 1/2 cup of tomato sauce or enough to cover each eggplant slice.”
Cashew queso (I like the brand, Siete Foods) is a popular ingredient in dairy-free recipes. I love this product but if you don’t have it, feel free to use traditional grated cheese.
